Peanut Butter Overload Chex mix

Hello friends! You know, sometimes I just like to make treats that are quick to fix, easy and and don’t take a lot of time. But unique as well. I know my kids appreciate that I go out of my way to create them yummy treats that are ready quickly. And they love to help.

Here is an easy to make Chex based treat that will get you raves by the Peanut Butter lovers in your house.

You’ll need

  • 1 box chex rice cereal ( I use generic because we cover the flavor anyway)
  • 1 package of almond bark ( or vanilla chips ( 2 bags) I buy these at walmart)
  • 1 cup creamy peanut butter
  • 1 small tin of salted peanuts
  • 1 package of mini Reese’s pieces
  • 1 package of peanut butter chips
  • 1/2 package of mini chocolate chips
  • parchment paper
  • microwave and large microwavable bowl
  • two large sheet/cookie pans

First, smash or break your almond bark into pieces, melt in the microwave on high about 1 minute at a time until the coating melts. when it is getting melty, make sure you check it about every 30 sec. so you don’t burn it.

Now add your peanut butter to the almond bark, it will melt in.

You will have a creamy tan color. You can add more peanut butter for a stronger flavor.

Now add the chex cereal in, and stir around, coating as much of the cereal as you can.

Then add most of your salted peanuts- yum, sweet and salty! Keep a handful or two out for the end.

Drop your mix onto parchment paper lined cookie sheets. This makes cleanup so easy!

Now, I have minions ( that’s what I call the kiddos when they are workin away for me). I have the minions sprinkle on the Reese’s Pieces, peanut butter chips, peanuts and the mini chocolate chips, while it’s still melty. If it cools off too fast, stick it in the oven at 400 for a few moments to warm it up again, then press the candies into the mix.

Allow to cool, then break into chunks and keep in an airtight container.Enjoy!
